When Homère Clément, (born in 1852 in Trinité, Martinique), acquired the Habitation and founded Rhum Clément in 1887; little did he realize that he was creating a lasting legacy.  Today 18th century Habitation Clément is one of the oldest estates on the island. Bernard Hayot bought Habitation Clément in 1986, and opened it to the public in 1988.  Most rum is made from molasses (a by-product of the sugar production), but the funkier Rhum Agricole is crafted from free-run sugarcane juice, giving it plant-like flavours and more sense of terroir. Think of it as the natural wine of the rum world. Homère Clément is widely seen as the father of Rhum Agricole (although it was his son, Charles, who perfected the family recipe), and the distillery that bears his name remains one of the finest proponents of this style. Their rhum is only produced for two months a year, when the sugarcane is ripe and fresh. ABV 40%Clément Blanc rum is made from the best selection of the finest sugarcane from Habitation Clément. The sugarcane is harvested as low to the ground as possible in order to get the highest concentration of sucrose. The distillery is within view of the fields to ensure freshness. The fermented juice is distilled to a relatively low abv of 70% which helps preserve a lot of the aromas and freshness. Unaged agricoles like this are great in traditional rum punches as well as a variety of classic cocktails. Nose: Pungent and grassy with delicate white floral notes and faint herbal tones. Palate: Starts almost sweet and quickly dries on the palate. Wonderfully expressive. Grassy, faintly earthy, and delicately herbal.
