Variety:
Yellow Catuaí is a hybrid of Mundo Novo and Caturra, which was developed by Instituto Agronômico de Campinas (IAC) in 1949. Together with Red Catuai, it is a highly resistant cultivar suitable for growing in higher altitudes and windy areas. Both Catuais have very refined and clean acidity, has a rich yield and is well-known for this fact. Next to Yellow Catuai there is also Red Catuai – Catuai-
Process:
The coffee cherries are selectively hand picked, after pre sorting they are brough to the Wet-mill on the farm and depulped. It is then laid on large patios and dried for 38—40 days until reached the humidity level of between 11.2—11.5%. The coffee is then bagged and allowed 28 days rest, before it is thenhulled using Cross Beater Hullers + Oscilating Screen Grade with then a finaly stage of Density Seperation. + Optical Eletric sorted and then bagged and ready for export.
