August is a lovely month in our herb garden. The air is full of the heady aroma of botanics heightened by the late summer sun and the only sound is the steady hum of insects as they forage in the herb beds. At the beginning of August we received a delivery of organic Esmeraldas Cacao Nibs from Ecuador. The organic cacao nibs are from rare and original arriba beans grown in the Mache Chindul Nature Reserve in Ecuador. Cacao Nibs have a bitter earthy flavour - like dark chocolate without any sugars added. We wanted to add a floral & fruity note to their bitter flavour. We caramelised the nibs and then added a gentle amount of dried lavender flowers and dried bergamot petals from our herb garden. We rounded the flavour off with a hint of orange. The dominant flavour in the bar is of bitter dark chocolate from the Mache Chindul Nature Reserve with a hint of floral from our herb gardens.   Cocoa From around the world.
