Hand-harvested in late September. Following pressing in membrane presses, the grapes are fermented at controlled temperatures in stainless steel tanks with a prolonged maceration on the skins. Malolactic fermentation occurs. Tasting Note:Dried cherries define the bouquet, while hints of spice follow.
