To sum up his philosophy, Morel says: "I makewines that I like to drink, with lots of fruit, good colour and arounded mouth-feel''.VINEYARDSDominique has 18 hectares of vineyards across Beaujolais, whichare planted on relatively low vigour granite soils. As a result, thevines have to struggle to survive, but stressed vines producesuperior and beautifully concentrated fruit. The densely plantedbush vines are south-west facing and 45 years old on average,producing 50 - 55 hectolitres per hectare and resulting inbeautifully concentrated wines. All work in the vineyard, includingharvesting is done by hand.VINIFICATIONThe grapes were treated minimally in the cellar. Semi-carbonicmaceration to extract colour, aroma and tannin took place intemperature-controlled stainless-steel tanks, following whichfermentation took place over seven to eight days. Minimumhandling techniques were employed and the wine stayed intemperature-controlled stainless-steel tanks after fermentation.TASTING NOTESThis Gamay has a clear ruby colour in the glass with delicatecherry perfumes. The rounded palate is full of fresh red berry fruit.Elegant, well balanced with good acidity, this is a great exampleof Beaujolais-Villages.
