The hotclimate and breezy conditions mean that disease pressure in thevineyards is low, one of the reasons why many Sicilian growershave embraced organic practices.In the hills around Menfi, there are close to 1,000 hectares oforganic vineyard, so it was relatively easy to select the best ofthese vineyards to use as the base for the Jummare wines.VINEYARDSThe vineyards for this wine are situated in the Menfi area, at analtitude of 250 metres above sea level on limestone-clay soils. Thepruning system is Guyot.VINIFICATIONOn arrival at the winery, the grapes were crushed anddestemmed. Fermentation took place at 18-22°C for up to 10days. Ageing took place in stainless-steel tanks for three months.TASTING NOTESStraw yellow with young greenish reflections, this wine opens withintense yet fine and elegant notes of hawthorn, grapefruit, apple,white peach and acacia honey.
