Congratulations you have hit the jackpot. Silver birch is a wood that you are not going to find mentioned on too many American YouTube channels. When you do find someone talking about it they are usually talking out their arse and mixing it up with American white birch which looks similar but is (apparently) not good for smoking. Silver birch is used throughout Europe to make wine, smoke fish and to smoke hams. The Germans use it make a fantastic BBQ pork dish called Mutzbraten. The world famous Scottish kipper is also smoked over silver birch. The Scots also use it in distilling. For us this is the king of smoking woods. The flavour is really well balanced and works especially well with pork and fish.
