Spare ribs or baby back ribs are one of BBQs special treats and this seasoning does them great justice. It also works really well on chicken.
We use the 3-2-1 method to cook spare ribs. Salt and season well and smoke over apple wood for 3 hours on a low heat. Wrap in foil with apple juice and cook for another 2 hours. Finally unwrap, baste the ribs in your favourite BBQ Sauce, and finish the ribs for the last hour. For smaller baby backs use the same method but halve the time of each cooking period (90mins/60mins/30mins).
