Perry Pear Gin A very old perry variety from Gloucestershire, Pyrus communis Gin is used for high quality, mild-bittersharp perry with a flowery aroma and medium acid and tannin levels. Forming a slightly vigorous, spreading, spur-bearing tree, it’s a good cropper, though as it has a biennial tendency, it’s advisable to thin pears early.
