Graeme Paul, who makes these wines for us, was impressed with the fruit from this village in 2011, so decided to vinify several varietals separately.The vineyards are located on low lying hills, where the Bassin de Thau (a string of lakes) moderates the climate. As there is little rain in the summer, the gentle breezes from the lakes and the Mediterranean Sea lower evaporation and in turn, reduce vine stress.The Grenache Blanc is fresh and unoaked and has a lovely depth of flavour that combines nicely with an attractive aromatic lift. It is dry and savoury on the palate. The red, a blend of Syrah and Carignan, has good colour, a spiced red fruit character on the nose and supple tannins on the palate. It has remarkable character for a wine at this price.The Chardonnay has lifted melony fruit on the nose, with nice roundness and texture on the palate. Graeme aged the wine on its lees in tanks for several months after the vintage to give it an extra depth and interest." Product Features:  Sustainable;Vegan;Vegetarian Winemaker: Graeme Paul Vineyards: The vineyards are located on low lying hills with the Bassin de Thau, a string of lakes stretching the Languedoc-Roussillon, moderating the climate. There is little rain in the summer and the gentle breezes from the lakes and Mediterranean lowers evaporation and reduces vine stress. Vinification: The grapes were picked once they reached maturity at 13% potential alcohol. The grapes were macerated on skins for ten days to give a good, cherry red colour and berry flavours and fermented at controlled temperatures of between 20-25°C which ensured that there was no over-extraction. No oak was used, to retain fresh fruit aromas. Tasting Notes: This blend of Syrah and Carignan has lovely ripe fruit balanced by lively acidity. It has a beautiful deep, dark red colour. Aromas of blackberries, soft red plum fruits and a touch of spice are followed by supple tannins and crisp acidity. Food Suggestion: Try this deep red wine with the excellent local 'boles de picolat', Catalan meatballs in a spiced tomato and green olive sauce.
