Altitude - 1100 - 1600 MASL Preparation - Washed Location - Motozintla, Chiapas. Mexico Variety - Bourbon, Catuai & Marsellesa Profile - Chocolate, Orange, Nougat This coffee has a rich body and medium acidity leading to a beautiful juicy cup on espresso with a lovely subtle chocolate finish. It’s very versatile in term of brew methods but our favourites are espresso or French press. The washed process gives it a nice clear and clean flavour with no muddiness. I chose to base the artwork for this coffee on Zenyatta Mondatta by The Police. While the title may be two made up words and while it may have been recorded in just 4 weeks (including breaks for gigs) it has stood the test of time as a document of a band at the peak of their powers. It’s still full of the punk and reggae influences that would start to be filtered out by the next album and has all the conflict that they were known for already bubbling away under the surface - John   Recommended Listening: Zenyatta Mondatta, The Police, 1980
