Located in the high altitudes of Huehuetenango, Tzun Witz is the name of the farm owned and run by Juliana Martin and her three children. Translated as ‘birth of the mountain’ Tzun Witz is named in Popti Mayan language, spoken by around 34,000 in Guatemala. Juliana is part of the cooperative El Sendero which helps local producers with knowledge and support, with the goal to improve the quality of life for farmers and their families as well as promote gender equality within coffee farming. The Co-op was formed in 2016 and has 196 members total, of which 62 are female.
Tzun Witz is just under one hectare in size, which means Juliana’s annual production is small (17 sacks of 69kg per year). After the cherries are harvested, they are immediately depulped at the home wet mill and left to dry ferment for 32 hours. The coffee is then washed and sun dried on patios for 6 days. The family takes it in turns to rake the beans to ensure even drying. With notes of red grape, violets and cream this coffee is incredibly perfumed, comforting and complex, a real highlight from Guatemala this year!
