Its inspiration is taken from the Autumn hedgerows of Natalie’s home in Cork. A cottage surrounded by old apple trees and hedgerows bursting with blackberries. Two fruits with an affinity with each other. Their harvest coincides with our need for hot puddings like crumbles, pies and stewed fruits. This bar is our homage to the comforting apple crumble of our childhood. Apple Crisps, Wild Blackberry Dust & Toasted Hazelnut on Milk Chocolate. We’re not sure what the apples from this old apple tree are, but they have a red and green skin and just the right mix of sweetness & sharpness. You can peel and core the apples, but we liked the way the skin brings a gentle colour to the edge of each slice and the apple core becomes a star in the centre of each apple crisp. The skin was unblemished, only needing a wipe before each apple was thinly sliced and plunged into a bowl of water and apple cider vinegar for 20 mins.  The soaked apples were patted dry and began the overnight drying process in our dehydrator. Using wild blackberries of course means they are smaller, but they give a much more intense flavour than the shop-bought varieties. The tiny fruits were soaked in a water vinegar solution, gently washed and patted dry with paper towels. We sprinkled them with sugar to soften their sharpness. Finally, we layered them onto our dehydrator trays, ensuring air could circulate around each berry. Before we use hazelnuts, we toast them for 10 or 20 minutes to develop a richer and deeper flavour and turn their skin to a golden brown.  Cocoa From around the world.
