Growing coffee has been part of their family’s heritage for generations with both brothers having fond memories of riding through coffee fields with their father and grandfather.   Jardins Del Eden specialises in exclusive coffee varieties including Gesha, Sidra, Pink Bourbon and Castillo. They also cultivate a range of exotic fruits such as bananas, plantain, and mandarin oranges on the farm ensuring they are kept busy throughout the seasons. This Pink Bourbon micro-lot was produced by Felipe using honey and tartaric acid process. The cherries undergo a careful selection process and are exposed to dry anaerobic fermentation for 72 hours. Mint leaves and tartaric acid are added as the fermentation takes place. The cherries are then pulped and left to dry on raised beds until the ideal moisture content is reached. The coffee cups with sweet, minty freshness - perfect for the holiday season.   As delicious as this coffee is as a warm brew, we recommend trying it as an iced coffee with a garnish of mint on a sunny summer's day.
