EL SALVADOR Variety: Bourbon| Process: Washed | Altitude: 1500 MASL | Harvest: February 2022 | Producer: Andrés Salaverria, San Francisco farm | Region: Apaneca-Ilamatepec, western El Salvador Sweet and creamy with notes of macadamia nuts, caramel and orange. This is our second year buying from the Salaverria family whose San Francisco farm is located near the Santa Ana volcano. The beans in this lot were harvested from an area of the farm known as El Pedregal or ‘rocky ground’, then depulped and soaked for ten hours before drying. We’re impressed with the resulting cup profile that is bright, clean and packed full of sweetness, making for exceptional espresso. The coffee plants at San Francisco receive an organic fertilizer made up of coffee pulp, fish waste and chicken dung – a potent blend that reduces the need for synthetic fertilisers.
