Ibiza is an amazing spot for fine dining and unique eating experiences, and it definitely did not disappoint. Every single place we visited served incredible dishes, and each was unique in its own way. One spot was particularly memorable: a gastropub called La Barrita.  They served us a dessert called a ‘deconstructed rice pudding’, which consisted of aerated cream flavoured with lemon, cardamom and coconut, topped with a small mountain of puffed rice. It was one of the best desserts we have ever tasted, and we were instantly inspired to recreate it for our Tasting Club subscribers. To do so, we added a touch of lemon to our rich milk chocolate, and then combined it with puffed rice. We poured this directly into our moulds, and sprinkled freshly ground cardamom and coconut flakes on top. It’s definitely one of the most unique-looking bars we’ve ever created, and the texture is reminiscent of something you might have had in your childhood.
