Bees are an incredibly important part of the Irish ecosystem, and of course, the world at large. We celebrated World Bee Day on May 20th, and that was the source of our inspiration for this Bean Lab creation. Over the last year, we’ve been working with Andrew Shinnick from Blackwater Honey to collect bee pollen from his bees’ feet.* Bee pollen has a floury texture, and its flavour can range from fruity and floral, to musky and bitter. It’s a complex ingredient to work with and we’re so happy to have the opportunity to create a bar using it. Using Blackwater’s Blossom Honey, we combined it with pistachios, sugar, sea salt and a touch of saffron to create a brittle that’s crunchy and full of depth, balanced perfectly between sweetness and bitterness. It was added to the top of our rich dark chocolate, with a sprinkling of bee pollen. The flavours in this bar work incredibly well together.  Cocoa From around the world.
