Join us as we recreate some of the most innovative and interesting dishes from the menu of “The Memphis BBQ Co” by Pitmaster Melissa Cookston. Hot smoked chicken wings, 3-2-1 Iberico pork ribs, red beans and rice, and we are thinking about trying our hand at the famous Memphis donut bacon burger! For dessert our resident baker, Laura, will serve a classic Memphis Coconut Cake. A truly decadent taste of the American South. We will serve a complimentary Barbacoa Rum or Low 'n' Sloe Gin for the non-drivers, and you are welcome to BYOB. There will be loads of soft drinks available. We will also send you home with a complimentary gift bag with 2 of our rubs and a treat or two. Menu Irish chicken wings cooked hot and fast with GNL sauce and Hot Wings dry rub. Spanish Iberico free range pork baby back ribsIf these are unavailable nearer the time, we will use locally sourced olive fed "happy pigs" from Olive Pork Donut Bacon Burger Red beans and rice - a classic Memphis dish. Breads & salads Coconut cake. Soft drinks & water Experience Live Fire Cooking Get experience working with open fire as well as an ugly drum smoker and a Weber. Use cast iron and learn why it is the best for this style of cooking. Learn about temperature control and how to manage fuel. This is not a workshop or how-to, but we really want to inspire you and get you asking questions. The Venue There is lots of off-street parking, we have basic toilet facilities, and there is shelter against light rain during the cooking. The meal will be indoors. Children are welcome but please please keep them away from the busy road beside us. If you have accessibility issues, please let us know – we think the venue should be ok but we can work with you to make sure of that. Diet & Food Safety Look to be honest if you are vegan or vegetarian then a meat centred barbeque is going to be a strange choice for you. We promise to run a vegan night soon – we have been practicing. If you are gluten free or have other allergies, we will do our best to cater for you, but you need to let us know well in advance. We have completed HACCP (food safety and handling) courses and we are registered with the HSE for this format of event.
