After years of selling to the local cooperative, Yves started bottling his own wine in 2005. His daughterAnaïs has now taken charge, after working for some time in NewZealand with Matt Thomson, and makes wonderfully pure winesthat reflect the potential of the local varieties with which sheworks. The domaine has been practising biodynamic since 2016and is currently in conversion. The first certified vintage will be in2021.VINEYARDSThe Picpoul grapes grow close to the commune of Mèze on achalky plateau. The proximity of the zone to the sea means coolmaritime breezes moderate the climate, making it ideal forgrowing this white grape variety. Its naturally high acidity isretained to give a wine of real interest and liveliness.VINIFICATIONThe grapes were harvested at night to ensure they were coolwhen they arrived at the winery. This meant that the delicate fruitcharacter was kept fresh before pressing, and the aromatic styleof the wine was guaranteed. The wine was fermented and storedin stainless steel tanks which ensured no oxidation of the preciousstone fruit character. A cool fermentation (around 15°C) alsohelped preserve the fruit purity. The wine rested on fine lees forthree months prior to bottling.TASTING NOTESThis wine is bright yellow in colour with youthful highlights. Vibrantcitrus aromas of lime and grapefruit are on the nose. The palate isfull but extremely well balanced, with fresh Picpoul acidity andpure fruit flavours. The finish is long and mouthwatering, withcomplexity of stone fruit, spice and minerality.
