Pressing, racking, yeasting and fermentation in Burgundian new barrels for 30% of the wine and 70% fermented in stainless still with temperature control at 13°C. 8% of the final blend has completed Malolactic fermentation Tasting Note: The ripe fruit flavour of Chardonnay -melon and banana- has the additional influence of Viognier which brings white flowers, peach and apricot. Combined with a little vanilla and spice from the barrels, this is a richly flavoured, but refreshingly crisp white of great character.Pairing Cured ham  with melon, foie gras ,  guinea fowl with mushrooms, matured cheeses, apple tart… Food Matches: Shellfish / Oysters / Mussels / Turkey
