Robin Naylor, Boutinot’s New World Product Manager, often thought about using the birds for a wine label as they represent true, natural South African wildlife. It just so happened one day that he was out in the vineyards of the Western Cape where he saw a Secretary Bird wandering past. As a true believer in fate, he decided there and then to use the grapes in that vineyard to create a fantastic wine from the Western Cape and call it ‘The Secretary Bird’. The Secretary Bird itself is so named due to the quill-like feathers which protrude from its crest. The bird is one of the Cape Winelands’ national treasures and can often be found wandering the vineyards and enjoying the South African sun!. Tasting Note: The winery receives the grapes before midday. They are destemmed and crushed into strainers where the free run is pumped gently to tank. The Sauvignon Blanc is fermented in temperature controlled stainless steel tanks at between 11C and 13C. The ferment is likely to last around 10 days. The wine is racked after ferment and then kept on fine lees right up until bottling.  This crisp dry  fruity Sauvignon blanc has rich gooseberry fruit aromas complemented by subtle flavours of ripe apples, citrus acidity on the palate, A delicious sauvignon blanc with and a long fruity  finish.
