The warm temperatures give ripeness and full citrus and apricot fruit, while the colder temperatures at night ensure fresh, pure Albariño aromatics. Vinification: Grapes are picked by hand in 20 kg crates and were de-stemmed and gently crushed and pressed. Alcoholic fermentation took place in temperature-controlled stainless steel vats between 16-18ºC. The wine then underwent full malolactic fermentation and spent four months on its fine lees which imparts a smooth, almost creamy texture to the wine. Tasting Notes: A lime yellow colour with golden highlights. Full of ripe apples, apricots, and peach aromas typical of the varietal. On the palate, the wine is rich, mellow and well-balanced with juicy fruit and clean acidity. Rounded, with a long, off dry, minerally finish. Food Suggestion: Excellently paired with seafood, shellfish, poultry and mild cheese. Closure: Stelvin  ABV: 12.5%  Acidity [g/l]: 6.5
