Three wines that will make it a very memorable dinner indeed. Starting with the stunning Ridgeview Estate Sparkling, followed by a White Wine from Burgundy that drinks like a wine twice its price and finishing with a Bordeaux from the legendary 2016 vintage.                                         Ridgeview Bloomsbury NV Ridgeview wines history began in 1995, when Mike and Chris Roberts decided to realise a dream. With a love of England and a passion for wine, they started to figure out the type of wine production they felt would give the best in the cool climate of Southern England. The traditional method sparkling wine made from the three classic varieties - Chardonnay, Pinot Noir and Pinot Meunier- was the most suitable. At the time, sparkling wine production in England was largely unexplored and unproven so the dream to create world class sparkling wine in Sussex was a certainly a risk. At the base of the beautiful South Downs with their chalky soils, with the perfect site, the journey began. After more than 20 years the production has increased to more than a quarter million bottles and Ridgeview is sold all over the world and in 2010 it has been awarded "Best Sparkling wine in the world" from Decanter.                  Philippe le Hardi 'En Vesveau' Saint Aubin 2019 Although it's tucked between the two prestigious 'Montrachet' villages of Chassagne and Puligny, you can still find great value in Saint-Aubin. And it has its own fantastic reputation for fine, steely Chardonnay. This is made on a small 4-hectare vineyard there. It has notes of apricot, citrus and vanilla. Serve this lightly chilled with sea bass. Chateau du Glana St Julien 2016The 2016 du Glana gives up plums, cassis, earth and dried herbs scents with nuances of meats and wood smoke. The palate is medium-bodied, elegant, fresh and minerally with fine-grained tannins and a lively finish.
