François Lurton, a huge fan of white wine from Friuli (northern Italy), wanted to pay tribute by making a wine from ‘Tocai Friulano’ (80%) vinified and matured on the lees in barrels. Combined with Viognier and Sauvignon Blanc, this is a fruity, rich, lively and very refreshing wine. WINEMAKING TECHNIQUES Harvesting by hand in crates after grape tasting to find the aromatic peak. Pre-fermentation maceration in the press, pressing. Fermentation in barrels, partial malolactic fermentation. Maturation on the lees with regular yeast stirring in barrels (three-year-old barrel stock). Only the Tokay is matured in 100% French oak barrels for nine months. Tasting Note:The yellow colour with green touches is representative of the grapes used, primarily Tokay with some Viognier.
