Our last organic coffee from Colombia was without a doubt one of the best Colombian coffees we've had at Soma. This is why, when stocks ran low, we made sure to have another organic Colombian ready to roll!
This coffee was produced by Emilse Rubio, a fourth-generation Colombian coffee farmer who inherited the La Vega farm from her parents in 1994. Despite having a husband and 2 kids, Emilse does most of the coffee farming and production herself, with a small bit of help from her nephew, Camilo. Emilse is a big advocate for organic farming practices and using sustainable practices to protect the land from over-farming. When we asked Emilse what she would like to share with the roasters who buy her coffee she responded with: 'Try to sell organic coffee to the customers. Colombia is a country with rich soil, but growers should take care of it. It could be possible, only if all consumers are aware of the impact of purchasing an organic coffee.'
This coffee is extremely complex. We found tasting notes from citrus and grapefruit all the way to green tea and florals. There was a bit of walnut in there, and out coffee brokers even detected notes of cedar. This is definitely a coffee that has loads to offer and will transform to highlight different flavours as you brew it in different brew methods.
