Strawberry & HoneyHarvest: February 2021Country: GuatemalaProducer:  Rosendo DomingoRegion: Petatán, HuehuetenangoProcess: WashedVariety: Caturra, Catuai, BourbonAltitude: 1,640 - 1,750 masl Despite its relatively small size, Guatemala’s coffee-producing regions have very different regional profiles, making it one of our favorite origins to work with! Huehuetenango is probably the most famous of these regions and easily the most enjoyable to pronounce (way-way-ten-AN-go!). This area has the highest non-volcanic mountains in Central America, and some of the most exciting, and complex coffees we’ve tasted from Guatemala have come from here. Located in the Petatán region, this coffee is produced by Rosendo Domingo, a trained agronomist and second generation farmer. At 0.7ha, his farm is very small and we feel fortunate to have purchased five of the thirteen sacks that were produced this year. Rosendo has extensive experience in coffee production and his agricultural knowledge has allowed him to apply the best practices on his farm. This coffee is shade grown and washed using the natural spring water found in the area. We love this coffee for its intense, almost sticky sweetness! Expect a well balanced cup with notes of fresh red berries, honey and elderflower.
