The dramatic slopes and valleys that comprise the landscape in this department have a direct effect on the temperature modulation that creates this high-acidity, super-sweet coffees: Warm, humid air collects in the lowlands during the day and creeps gently up the mountainsides at night, a combination that allows coffee to thrive at much higher altitudes than most of the rest of the country, as much as 2,300 meters above sea level. About Nariño - Limited Time Only Roasting fresh green beans provides a completely unique tasting experience. The Nariño is roasted fresh from the harvest at a height of 1700m with little oxygen. The coffee tradition goes back to his great-grandparents and his passion and love for what he does are admirable. He is part of a great coffee grower community of about 45 families in Santa Barbara. Their organization skills and the willingness of the group to keep on improving their coffee process are bringing the possibility for a better life for them and their families. Don Severiano is 62 years old. He and his wife have 3 daughters, Nelsy (38), Viviana (33), and Maria (31), and one son, Leonardo (26). His family and friends describe him as a person with a good sense of humor and reliability. Doña Dioanisa, don Severiano's wife, is 58 years old. She helps on the farm at harvest time. The rest of the time she makes crafts for sale. Roastery - Amor Perfecto Amor Perfecto’s flagship Single Origin coffee comes from one of the most famous coffee-growing regions in the world, the State of Nariño. The most southern coffee-growing state of Colombia, Nariño is the 9th largest, among the 22 coffee-growing states of Colombia. Most of the coffee farms in Nariño are smaller than 1 hectare, similar to the vineyards of Burgundy, this makes each coffee grower take special care of their coffee plants and their post-harvest coffee processes. This is one of the highest altitude coffee-growing regions in the world, bordering the Equator, where naturally occurring differences between day and night temperatures allow for a concentration of the sugars in the coffee cherries. Along with its volcanic soil, Nariño is simply an ideal part of the world for growing great arabica coffees. Our coffee beans come principally from the Union District of Nariño, located between the volcanos of Cumbal and Azufral. We at Amor Perfecto, have been working together with these farmers for more than 15 years! And with the special support of Racafe, they have reached our highest standards. In the same way, you would say thank you to your local barista in the morning, we want to acknowledge the tireless effort of all the farmers and roasters we will feature throughout the series.  Moyee Coffee Impact Mission Currently, 90% of the proceeds of the total coffee production disappear into the pockets of a number of large multinationals, which we call the 'Big Coffee'. This means that the coffee farmers are left with only 10% of the value. Value where nothing has been 'added' - only 2% is actual profit! We may be entrepreneurs, but this imbalance cannot be justified in any way.  By applying FairChain principles we leave 300% more money in the coffee-producing country. We also pay our farmers a 20% FairChain premium with the aim of growing towards a living income.
