Ethiopia is universally referred to as the birthplace of coffee and it's one of the few places where coffee is grown and cultivated in the wild. The flavours here are notably diverse from citrus to florals, through to candied and even tropical fruit. We’re kicking off the season with this beautiful coffee from the Aricha washing station in Yirgacheffe. It's elegant, complex and sugary sweet and we think you’re going to love it!
The climate and high altitudes found in this region is perfect for producing quality coffee. The temperatures are cool, allowing the cherries to mature slowly and develop complex sugars. Once picked, they are dried for 12-15 days on raised beds. Drying coffee slowly like this not only benefits quality in the short term, but also how long a coffee will retain good flavour when stored in its unroasted state. This is one of the reasons why Ethiopian coffee can still taste sweet and fresh more than a year after being harvested.
Coffees from Yirgacheffe can be explosively aromatic, full of citrus and floral notes and in many ways, truly unique! While this coffee was less aromatic than some of the others we tasted earlier this year, it's flavour's really stood out! Expect a creamy, well balanced cup with notes of peach, lavender and black tea.
