The well drained soils are very well suited to the growth of this varietal, driven by deep sandstone parent rocks and layered gravel with sporadic deposits of schist. The underlying clay in these soils help to buffer against the heat experienced in Stellenbosch during the summer months. The Helderberg Mountain region is known to produce Cabernet Sauvignon characterised by earthy aromatics, well-textured tannins and fresh finishes. These are some of the factors that contribute towards the Helderberg area being particularly well known for longevity in their wines. Tasting Note:Waterford Estate Cabernet Sauvignon has aromas of cedar wood, lead pencil and cassis with tinges of white chalk on the nose, a classic Cabernet Sauvignon from what will be classic vintage.
