BREWING METHOD - V60 1 cup

Use 16g coffee, and 250g water at 94 degrees. Use 50g of water to bloom, over 30 seconds. Then slowly pour the the remaining 200g slowly. Brew for 2 and a half minutes total.

This is one of our most exciting releases ever! In a time where positive stories have been hard to come by, the progress coming out of Yemen now needs to be put up in lights for the world to see.
Qima Coffee works directly with Yemeni growers to rebuild Yemen’s specialty coffee industry. In August 2020, they discovered one of the most significant findings in coffee history: an entirely new mother population, Yemenia. Yemenia is a pure arabica mother population, unique to Yemen and previously unmapped in the world of coffee. We were lucky enough to secure a small batch of the Yemenia lots offered by auction, and introduce the first Yemeni coffee in Ireland.
IN THE CUP
Medium to light bodied, with a smooth, sticky finish, this single origin has a rich aroma of lemon peel and rose-hip water. The cup boasts sweet-berry tastes of lemon curd, golden raisin and strawberry. This is complemented by a finishing hint of sugar cane on the tongue and once cooled, a tropical sensation of mango and pineapple, which adds another layer of complexity and flavour. It's really something special.
This sample is from the Mutawasat Community Lot, which gathers the produce of 55 farmers from one of the most remote and arid regions in Yemen. For these farmers, coffee is their only source of income and they have spent their whole life on the farm cultivating their crops. They started at a young age helping their parents on the farm and with time they inherited land and gained enough knowledge and skills to take responsibility for the farm for themselves.
