This coffee marks a first for us at Soma in quite a few areas. It is our first Guatemalan coffee ever, which we are very excited about! Guatemala in general is an exceptional coffee region with lots of great quality to offer! Watch this space because we are sure to have more where this coffee comes from. It is also our first time roasting a Villa Sarchi variety. This variety is a natural mutation of the Bourbon variety that originally occurred in Costa Rica, but because of its suitability to the climate, it has become quite popular throughout Central America. The Villa Sarchi variety offers excellent cup quality with nuanced acidity, great clarity, and prominent sweetness.  The farm that produced this coffee has a very interesting story and is responsible for growing progressive mindsets in the coffee community in Guatemala. When they first took over the farm, they split it into four sub-sections where they tried four different fertilizing practices: commercial, ANA CAFE's recommended protocol, a mix of commercial and organic, and fully organic. The results surprised everyone with the organic section of the farm out producing the other sections with up to five times the yield. The farm is now fully organic and they are instrumental in offering training to other farmers to adopt organic practices and improve quality. In the cup, this coffee is all about balance - it's got so much to offer, and depending on how you brew with it, you can choose to accentuate your favourite qualities. It's got fantastic body with rich hazelnut flavours that make this a perfect coffee for a flat white, but with the vibrant blood orange acidity, it can also make mind-blowing filters. All these qualities are balanced out by a caramel sweetness that is typical of both Guatemalan coffee and the Villa Sarchi varietal and reminded us of toffee.
