"There aren’t many guys like Pedro Parra. This guy has a PHD in terroir. And for his day job he’s a consultant for some of the most prestigious wineries in the world including Burgundy icons Jean-Marc Roulot and Louis-Michel Liger-Belair. This line of wines is Pedro’s dream come true-Chilean wines grown in cool climates and planted on granitic soil. This particular wine comes from Itata, an appellation within Chile’s Bio bio. The wine is a blend of Cinsault and Pais (Pais is an old school grape historically found in very old California vineyards).
Tasting Note: The nose is an intoxicating mixture of wild flowers, aromatic herbs and spices, with bright red fruit, hints of cassis and pollen, with quite a lot of complexity.Food Matches: A perfect pairing for red meat: cured, grilled, or roasted."
