Italy's fertile Northern Regions produce the most beautiful hearty dishes that sustain its people through their winter months. They are rich, falvoursome and full of the earthiness of the land. This class will show you how to cook five celebrated Northern Italian dishes that are ideal for any social gathering at this time of year. Suitable for beginners or seasoned cooks. Price includes a glass of prosecco on arrival, your recipe packs and the full menu, so please arrive hungry!  On the menu (subject to minor changes): Papparadelle al pollo - a earthy pasta dish with porcini mushrooms and chicken Risotto con zucca - butternut squash risotto with sage Ribollita - a warm hug in bowl, a soup and supper all in one Strombolli - Italian yeast bread stuffed with mozzarella and various fillings Torta cioccolato e pere - a delicious moist chocolate cake with pears About your host   Ruth Wassel is one of our Triggerfish resident cooks. She spent 10 years living and cooking in Naples, Italy. She was a tutor at the Ballymaloe Cook School for two years and is passionate about cooking with the best of Irish ingredients. She has written for Food and Wine Magazine and has done cookery demonstrations all over Ireland for Gaggenau, Neff, Siemens and KitchenAid. She cooks for Bora in Ireland and London and does regular demos for the diabetic centre in St James hospital.
