Today, he is the proprietor, along with his sister, Nathalie and parents Jean-Claude and Claudine Boisset, of a collection of more than twenty great producers from the world's pre-eminent wine producing regions, including those in our portfolio, De Loach Vineyards (Russian River Valley), Jean-Claude Boisset (Burgundy) and Louis Bouillot, Burgundy's leading producer of sparkling wine. Created by Jean-Charles, the innovative JCB Collection brings together two worlds of winemaking - Old and New. Each wine in the collection is a limited edition and is 'named' with a number. These numbers relate to a wine style that Jean-Charles strives to achieve vintage to vintage, while also symbolizing important ideas, passions and moments in his life and wine career. Our two sparkling wines are named 'No21' and 'N°69' which both hold a deep significance for Jean-Charles.Jean-Charles' philosophy of wine has been profoundly shaped by the wine region where he was born and raised. 'N° 21', a blend of Pinot Noir and Chardonnay, honours this connection and heritage, because 21 is the French government's 'département' number for the Côte d'Or. Jean-Charles was born in 1969, the year that mankind went to the moon. 1969 also represents unlimited expression, freedom and refinement. We love the elegant style and finesse of both of these wines, made using the traditional method and aged for a minimum of 12 months on the fine lees to add depth and complexity. 'N°21' is refreshing and elegant, while 'N°69' is exuberant with enticing flavours of raspberries and red fruits." Vinification: This sparkling rosé was made according the 'saignée' method. During the pressing of the grapes, the free run, first press juice - 'the cuvée' - was separated from the 'taille', which is the juice from the last press, and kept aside as it is the best juice to use in the making of the Crémant. This was then fermented is stainless steel vats for two weeks at 18°C. Following this period, the wine went through its second fermentation in bottle. Tasting Notes: This Crémant de Bourgogne has a lovely pale pink colour with nuances of rose petal and a fine festive mousse. The bouquet is full with red fruit aromas and a crisp and lively finish. Food Matches:  Great as an aperitif by itself or with some canapés. It could also be paired with some Thai dishes. Closure: Natural Cork   ABV:  12.0%
