Established in 1961 when the growers from two villages came together, the co-operative now has 25 growers who farm 250 hectares and 750 vineyard plots. The aim is to vinify each plot separately. This enables the winemakers to show the grower the wine made solely from their grapes, something which is rare in the world of co-operatives.At the same time, suggestions are given to growers to help them improve vineyard practices which would result in better wines the following vintage. Oisly's technical director, Agnès Bardet, has been working there for over 20 years, beginning in the laboratory and vineyards, so she knows each grower's vineyards intimately. She now runs the winery and coordinates the harvest for each grower. We were impressed with the precision, aromatics and overall quality of their Touraine Sauvignon Blanc. This can be attributed to Agnès' work with the growers and the varied blending options she has due to the numerous fermentations carried out on each grower's grapes. Low fermentation temperatures ensure the primary exotic fruit aromas are retained in the finished wine. The result is an excellent wine that offers superb value." Winemaker: Frederic Moreau Vineyards: The vineyards are located around the two villages of Oisly and Thésée in the heart of the Cher Valley. There are two types of soils: clay-siliceous and a clay-chalk mix. The vines are about 25 years old and the yield is 60 hectolitres per hectare. Vinification: This can be attributed to Agnès' work with the growers and the varied blending options she has, due to the numerous fermentations carried out on each grower's grapes. The grapes were pressed immediately and the juice selected for vinification. It was kept at a temperature of 5-6° on fine lees for six to eight days to settle ('debourbage') before fermentation at controlled temperatures (16-18°) in thermo-regulated stainless vats for 10 days. Tasting Notes: This Touraine Sauvignon Blanc offers great precision and clean aromatics. Very crisp and refreshing on the palate, it leaves a pleasant, mouth watering finish with lovely flavours of pear and green apple. The result is an excellent wine that offers superb value.
