Originally created in 1927, VSOP evolved into the VSOP Mature Cask Finish Cognac in 2012: A new finishing procedure of this Grande Champagne, Petite Champagne cognac allows a smoother palate. 20% of the Fine Champagne eaux-de-vie get aged for another 20 years. This cognac finishes in old barrels for a year before bottling. Founded in the early 1700s, Rémy Martin has grown to be one of the biggest Cognac houses in France. What sets it apart is its insistence on only using eaux-de-vie from grapes grown exclusively in the top two Cognac regions: Grande Champagne and Petite Champagne. Tasting Note Nose Dominant notes of vanilla thanks to longer aging in French Limousin oak barrels, followed by ripe apricot, baked apple, and an elegant floral note. Palate A perfect harmony between the firm character of ripe fruit and subtle notes of liquorice, offering a great complexity of elegant and powerful aromas.
