In this case the Pinot Noir is carefully sourced from a single vineyard in Elgin, the best suited terroir for the growth of Pinot Noir, with a slightly cooler climate than Stellenbosch. Once the grapes are harvested, they are transported to Waterford Estate for vinification. A very natural approach is followed in order to best express the characteristics of the surroundings of the vineyards. When compared to previous vintages, the 2017 Pinot Noir vintage has a modern edge. The drought meant that the winemaking team had more control over the growth and ripening of the vineyards, helping them to produce a fresher wine. Tasting Notes: Strawberry and cranberry notes are layered with hints of toastiness and Darjeeling tea. There is a sense of breadth on the attack and good concentration on the palate. The finish tapers elegantly, with the acidity and fruit working in alignment. Pairs well with lean red meats such as venison as well as a variety of earthy components.
